Most Amazing Meal I've Ever Had

On days like this, you realise just how much you love your job. Why? Basically cos I've been asked to do a food review on Golden Sands Hotel's 2-day promotion called 'Molecular Cuisine'. It was a 15 course dinner, yes 15 courses! .. The best part is, I'm getting paid to eat. The dinner would normally cost $500 per person .. but I'm eating for free, and getting paid bout $100 to do so. Wonderful isn't it ?

Let's just say this is not your typical meal. Everything, every dish, is almost a work of art. For those who know, Molecular Cuisine is a new age cooking discipline, where food preparation relies heavily on science and chemistry. Has to be seen to be believed.

The best part was, all the preparation for the dishes was done in front of us. 'Frying' ice-cream in nitrogen, 'spaghetti' made from jelly, 'mashed potatoes' that you can drink, 'gold'-plated crackers, olive oil that became 'instant noodles', 'caviar' made from watermelon juice pumped out of syringes .. and the most amazing one, 'frozen air' which made you puff smoke from your nose.

The spaghetti course was one of the starters .. no fork and spoons allowed. The proper way of eating was to suck it straight off the plate, which is supposed to enhance the flavour. It is topped with truffle oil, those little black things you see. Truffles are rare and hard to find mushrooms, a piece the size of your fist could cost over a thousand bucks US dollars. Which is why you only get tiny shavings of it :

Another of the appetizers, foie gras which was made to look like a lolipop. It was actually goose liver, but the taste is absolutely sweet and smooth, almost like ice cream. I'll put this as one of the best things i've ever eaten :

This one is the ocean trout with caviar and citrus syrup .. lets just say that sauce will blow you away :

The '21st Century Omelette' .. ever heard of an omelette that you could drink out of a glass? Well i haven't either until this came to my table. The eggs are beaten with air, its so light it almost disappears in your mouth. It tastes just like mashed potatoes, or even better :
Here comes the 'instant noodles'. Notice the inverted commas as the noodles are actually made from emulsified olive oil. The chef will pump the olive oil out of a syringe, when it contacts the hot soup, it solidifies and becomes a noodle. Instant noodles, literally. Served with prawns in a golden soup:

Lobster on a bed of wild rice with apple concentrate and lemon air. The green syrup is the apple concentrate, and the white ball on top is the lemon air. Ever eaten air before? I haven't .. until now that is. Basically its lemon juice, cooked 11 times, yes 11 times .. and then beaten until it turns into a puff of air. Kind of like the foam you get when you shampoo your hair. Thats the same texture .. only this is made of lemon. Put it in your mouth and it instantly evaporates, leaving you with a tangy sensation. Amazing :

This is the final main course, the 13th course overall, Rack of Lamb with Juniper Syrup and Golden Crisp. Literally, i ate gold. Lol .. that was the most luxurious lamb dish I ever had :

Highlight of the night was dessert, Chocolate Nitro with Pistachio Sauce. So named becase it involved liquid white chocolate being pumped out of a canister into a bowl of liquid nitrogen, which is at -190'C. Upon contact, that chocolate mousse instantly solidifies, or 'fried' as the chef says, and turns into a white chocolate ball which is crispy outside and liquid inside. Bite into it, and all the sweet chocolate just oozes out. Here is the chef preparing the dish :

And this is the finished product. Seriously, every dish is a work of art. That is the best thing i've ever tasted in my entire life, or ever will. No words can describe how good this thing tastes in your mouth :

If that wasn't enough, there was a surprise 15th course, called Kiss of the Dragon. Its basically orange 'air', thrown into liquid nitrogen so it solidifies into a ball. Imagine taking the foam from your shampoo, and freezing it. So, when we put that ball of orange air into our mouths, all that frozen air that was trapped inside the ball, was released thru our nostrils. It was like a dragon that was puffing out smoke .. hence the name. That was the first time i breathed smoke, cold frost that is, out of my nose .. incredible !


Not to be exaggerating or anything, but you would have to taste all this to believe how good it is. I doubt i'll ever eat anything quite as unique or luxurious as this ever again .. well, unless i visit the chef's restaurant in Singapore, which serves only molecular cuisine.

Every dish tasted amazing, looked amazing, and was prepared amazingly. Lets just say I'm stunned by what i saw and tasted. Now I know why it costs $500. Every single luxury food that you could eat .. truffles, caviar, lobsters, foie gras, etc .. all in one meal. Now that's a meal one can only dream about .. I was lucky enough to have had a chance to sample it for free. Oh, and we had free flow of imported Italian champagne .. I had about 10 glasses.. Lol.
